Jamie Oliver’s salmon traybake uses 5 ingredients for an ‘easy tasty meal’ in 15 minutes

Celebrity chef Jamie Oliver champions effortless cooking with his array of traybake recipes. Among his favoured dishes is a simple salmon recipe cooked in a foil parcel, requiring only five ingredients, including the star ingredient, salmon itself. Oliver stated this recipe highlights one of his preferred approaches to preparing this popular fish.

Effortless Salmon Traybake Recipe

Utilising a foil parcel not only steams the salmon to perfection but also infuses it with flavour from a combination of ingredients, resulting in a satisfying and straightforward meal ready in just 15 minutes of oven time. Baking salmon in foil also minimizes post-cooking cleanup.

Ingredients

  • Half a 460g jar of roasted red peppers
  • 15g smoked almonds
  • One 400g tin of chickpeas
  • 30g of chorizo
  • Two salmon fillets, skin-on, scaled and pin-boned

Cooking Instructions

Preparation

Begin by preheating your oven to 220C (200C fan/Gas Mark 7). Place a large sheet of foil on a baking tray, ensuring half hangs over the edge.

Creating the Sauce

For the sauce, drain the roasted red peppers and combine them in a blender with the almonds, the majority of the chickpeas (including their juice), reserving a few whole chickpeas for later. Blend until the mixture is smooth.

Assembling the Traybake

Season the sauce with salt and pepper to taste. Spoon the seasoned sauce into the centre of the foil on the baking tray.

Thinly slice the chorizo sausage. Using a sharp knife, make two 1cm-deep incisions into the skin side of each salmon fillet.

Scatter the sliced chorizo and the reserved whole chickpeas over the sauce, distributing them evenly as shown in the image associated with the recipe. Place the salmon fillets on top of the sauce.

Baking the Salmon

Season the salmon with a pinch of sea salt and black pepper. Drizzle lightly with olive oil.

Fold the overhanging foil to enclose the ingredients and twist the edges to create a sealed parcel. Bake on the bottom rack of the preheated oven for 15 minutes, or until the salmon is thoroughly cooked.

Serving Suggestion

Oliver suggests serving the salmon traybake with a side of steamed or roasted seasonal vegetables for a more complete meal.
