As climate change increasingly challenges coffee production, optimizing brewing efficiency is becoming crucial, states Arnold Mathijssen of the University of Pennsylvania. This new method focuses on maximizing extraction from coffee grounds, ensuring a flavorful and strong brew with less coffee.

“Coffee cultivation is becoming more challenging, which will likely lead to price increases in the coming years,” Mathijssen explains. “This research aimed to explore methods to reduce the amount of coffee beans needed, while maintaining the same level of extraction and coffee strength.” The study specifically focused on the pour-over brewing method, seeking to refine the process for optimal resource utilization.

Key Pour-Over Technique Tips for Optimal Extraction

The researchers’ recommendations for an improved pour-over technique are straightforward and easily implemented. Primarily, they advise pouring water slowly. The extended contact time between the hot water and coffee grounds within the filter cone enhances extraction efficiency.

The Role of Pouring Height in Coffee Brewing

However, solely pouring slowly is insufficient. Excessively slow pouring can lead to grounds settling and reduced overall extraction. While acknowledging the inherent variability depending on coffee type, grind size, kettle design, and other variables, the researchers confirmed that their refined pour-over technique can save between 5 and 10 percent of coffee beans. Their tests indicated that the resulting brew maintains comparable levels of dissolved solids, ensuring the same strength and desirable flavor profile.
