Nigella Lawson says omelette will be lovely and golden if cooked with 1 unexpected item

Star chef Nigella Lawson has revealed an unusual way to make a quick, delicious omelette by using one very unexpected but easy to find ingredient.

The celebrity chef has enjoyed a long and wildly popular career sharing tasty and relatable recipes for everything from steak and fish to roast potatoes and fried chicken. In one of her most popular recipe tips, Nigella revealed the best way to get ‘lovely and gold’ omelettes with a focus on a spicy twist. To make a masala omelette, you’ll need chillis, spring onion, and some spices like turmeric, garlic and coriander.

But the crowning ingredient is humble brown sauce. Nigella said: “This is one of my most regular solitary breakfasts, masala omelette.

“It means spice. You can really use what you want in this, I have a chilli, sometimes two, and I’m going to leave the seeds in so it keeps it nice and hot, and spring onion as finely sliced as you can muster.”

She put the chopped veg into the frying pan with the oil and let it simmer, before adding the eggs at the end.

Nigella continued: “A bit of oil, not too much, stick in the chilli and spring onion, make it as hot or as modestly heated as you want, some garlic.

“I tend to make this very simple, a bit of chopped chilli and some chopped fresh coriander.

“Heat it through to soften. Put a bit of ground coriander, bit of cumin, and a small bit of turmeric for some ‘good mood gold’.

“While that’s bubbling away, take the eggs, pour over and just turn it so it sets at the bottom.”

Once set, ‘show’ the omelette to the grill by putting it under the grill, in the flying pan, so the top sets as well.

She said: “Now it’s already lovely and puffy and gold and ready.”

Then, you roll the omelette in a tortilla wrap and slap on the unexpected ingredient – brown sauce.

“And perhaps not authentic, but a bit of brown sauce, and just roll up.

“It’s very very good.”
