Kulfi, an Indian frozen dessert, is distinguished by its velvety texture and a density that comes from its having been churned only minimally, if at all. Heritage Kulfi, a new brand being introduced at the store Kalustyan’s, in Manhattan, comes in several intense and alluring flavors like saffron, rosewater and cardamom-chai. Earl Grey, Alphonso mango, pistachio, coconut and vanilla are the other flavors offered by the company founded by Mansoor Ahmed, an entrepreneur who is of Indian descent. The company, based in Princeton, N.J., developed a proprietary process to make the flavors soar.
