Dress Your Spring Salads With Zeal, a Ramp Vinegar

Ramps, a wild allium, are early spring signposts in woodlands, farmers’ markets and on menus. A new ramp vinegar, called Zeal, is from Brightland, a company based in Los Angeles that gets its products, mostly olive oils, vinegars and honeys, from small producers in California and elsewhere. This pale golden vinegar made in partnership with Lindera Farms, which forages the ramps in the Shenandoah Valley in Virginia, has an aroma and flavor distinguished with mild pungency. It’s excellent for dressing grain salads, poached leeks and spring greens.
