In many countries the prelude to Ash Wednesday and Lent is Carnival, which usually lasts several days. Doughnuts are often the treat of choice. For the celebration this year, Fany Gerson, an owner of Fan-Fan Doughnuts in Bedford-Stuyvesant, Brooklyn, and La Newyorkina, known for sweets and frozen confections, is baking them with a nod to New Orleans. She has added a subtle touch of Southern Comfort, a whiskey-based liqueur that originated there, to the citrus-flavored glaze and dusted them with the traditional Mardi Gras purple, green and gold, like little king cakes. The doughnuts, $4 each (limited to four per person) are sold from Tuesday through March 1.
