According to Gavin, the secret to preserving peach slices is lemon juice. A generous application provides “natural acidity” that effectively inhibits the enzymatic process that causes browning when peaches are exposed to air.

The Science Behind Browning

“When peaches are cut, they are exposed to oxygen. This contact triggers a reaction that produces an enzyme called polyphenol oxidase,” explained Ms. Gavin.

She continued, “This enzyme is the culprit behind the undesirable browning of the fruit. Fortunately, there is a straightforward solution to prevent it!”

“After slicing your peaches, liberally coat them with lemon juice. The natural acidity of the lemon will help reduce the enzymatic reaction, keeping the peaches looking bright and fresh for an extended period,” Ms. Gavin advised.

The food expert also addressed a concern from a reader regarding a potentially “tart or sour” taste when using lemon juice on fruit.

“It will impart a slight citrus flavour,” she acknowledged. “To lessen the flavour intensity, submerge the peaches in a bowl of water mixed with lemon juice, and then drain and dry the fruit.”
