Ingredients:
Boneless skinless chicken thighs – you can’t substitute with chicken breast as you need the fat to transform the sauce into a glaze
Soy sauce – all-purpose or light soy sauce, not dark soy sauce
White vinegar – just everyday, plain white vinegar. Sub with any clear vinegar, including rice wine, apple cider, sherry vinegar
Onion and garlic
Peppercorns
Sugar – brown is best, white can be used
Bay leaves – fresh or dried
Spring onions – optional garnish
Method:
1. Add all ingredients to a bowl and marinate for 20 minutes.
2. Remove chicken and sear in a hot pan
3. Add marinade into pan and simmer for 25 minutes – it will look watering up until the last few minutes then it will transform into a syrup/glaze.
4. Finish with sliced spring onions and serve with rice and a side of fresh green salad.
