A foodie has shared her simple recipe for cooking crispy spicy onion rings to perfection without using a deep fryer. 

Cherie Tu, from Sydney, seasoned the onion rings with smoked paprika, cayenne pepper, garlic powder, turmeric and chilli powder.

Other ingredients you need are plain flour, panko bread crumbs, salt and pepper.

The cookbook author of Thriving On Plants said the trick was to keep two layers of onion together to create a thicker ring.

How to make crispy onion rings 

INGREDIENTS 

2 brown onions

Wet mix

2/3 cup plain flour

3/4 cup unsweetened soy milk

1/2 tsp smoked paprika

1/2 tsp cayenne pepper

1/2 tsp garlic powder

Pinch of turmeric, for colour (optional)

Salt & freshly cracked black pepper

Dry mix

1 cup panko bread crumbs

1/2 tsp chilli powder

METHOD

1. Cut the ends off the onions, peel and slice into 1cm thick rings. Separate the layers to create your rings. I prefer to keep two layers together for a thicker onion ring.

2. In one bowl, combine all the wet mix ingredients and whisk well. In another bowl, combine the dry mix ingredients.

3. Dip each ring into the wet mix, followed by the dry mix.

4. Transfer into the air fryer basket, ensuring not to overlap them. Lightly spray with oil and air fry each batch for 10 minutes or until golden and crispy.

For the oven method, place the battered onion rings straight onto a lined baking tray, ensuring they are spaced out and not overlapping one another. Then give them a generous spray with oil before baking in a 220C preheated oven for 20 minutes or until golden and crispy.

To make the snack, simply peel and slice the onions into one centimetre thick rings.

In a bowl, she mixed all the wet ingredients together with a whisk to create a batter, while in a separate bowl, she combined the dry ingredients.

Next she dipped the rings individually into the wet mix, followed by the dry mix.

The rings can be baked in the air fryer or oven.

For those with an air fryer, Cherie suggested transferring the rings into a basket, ensuring not to overlap them.

Lightly spray with oil and air fry each batch for 10 minutes or until golden and crispy.

‘I would recommend air frying them if you have an air fryer at home,’ Cherie told Daily Mail Australia. 

‘This will give you the best results in terms of crispiness and texture, especially considering we’re using very little oil and we’re not shallow or deep frying them.’

For the oven method, she suggested placing the battered onion rings straight onto a lined baking tray, ensuring they are spaced out and not overlapping one another.

To mark International Burger Day on Friday, May 28, Cherie has offered her take on a double vegan ‘beef’ burger to go with the spicy onion rings.

Double vegan ‘beef’ burger recipe

INGREDIENTS

250g vegan mince

1 medium brown onion, peeled and sliced extra thin (preferably using a mandolin)

4 slices vegan cheese

2 burger buns

Burger sauce

Tomato, thinly sliced

1 dill pickle, sliced

Lettuce 

METHOD 

1. add vegan mince and onions into a bowl and mix well (volume-wise they should be in a 1:1 ratio). Divide into four even sized balls.

2. Heat griddle or cast-iron skillet over medium-high heat. Add a splash of oil (any with a high smoke point) then add in the balls. Press down and flatten with a spatula. Try to get the patties as thin as possible. Cook on one side for one to two minutes until browned, flip, season with salt and pepper, top with cheese and cook with lid on for two minutes until cheese has melted. In the meantime, toast buns separately until edges start to brown.

3. To assemble, spread the sauce to the bottom of both buns. Top with two patties each, followed by the tomatoes, pickles, lettuce and other half of the buns.

4. Serve with onion rings and enjoy immediately.
