How to manually save Red Dead Redemption 2:

Begin by visiting Red Dead Redemption 2’s pause menu by pressing the PS4 or XboxOne options button.

Next scroll down to Story and press X, where you will find the Save Game and Load Game options.

Selecting Save Game brings up a list of 15 available save slots while pressing Load Game lets you load from any of these slots or your latest autosave.
