Christmas leftovers: Recipes to use up every part of your turkey dinner

Christmas is here, and the highlight of the day for many is the turkey dinner.

Cooking the best turkey roast is difficult enough – but once the meal is over, what should you do with the leftovers?

There will be roast potatoes and turkey, as well as stuffing and all the trimmings.

Don’t waste all of the delicious food, instead make these dishes instead.

Turkey

There are many things you can make with the leftover turkey meat from your Christmas dinner.

One idea is a potted turkey, served with chestnut and cranberry.

Curry is another popular choice for leftover turkey, as it brings an inventive twist to what can sometimes be an uninspiring meat.

Roast potatoes

One of the most popular aspects of the meal, there may not be any roast potatoes left.

But if there are, turn them into a delicious potato rosti.

The rosti contains bacon, so is not one for vegetarians, although this could be left out if desired.

Vegetables

Brussels Sprouts, carrots and parsnips will make a delicious wintery soup.

Choose from Brussels Sprouts and cheddar or bubble and squeak with dumplings.

Serve with fresh crusty bread on Boxing Day or for some of the days afterwards.
